Ever since Beth booked a pair of $8 tickets (Ah! Spirit Airlines) to Guatemala, we’ve been in love with the country and its people.

I’ll never forget that first morning we rolled in Antigua after a red-eye from Los Angeles into Guatemala City. We were tired but also had that electric feeling that filters through your body like a live wire whenever you step into a new destination. With no particular place to be, we stepped into a restaurant for breakfast and coffee; my god was that coffee delicious. A few years later during our volunteer trip with Cooperative for Education (CoEd), we ended up back at that same restaurant for lunch with two of its scholarship students.

Beth and I are so happy that we got to travel to Guatemala with CoEd as part of its media fellowship. Their Snapshot Tour took us into schools and communities, allowing us to connect with locals in ways we never imagined. We also got to see firsthand the important work Cooperative for Education is doing on a daily basis with its reading programs aimed at breaking the cycle of poverty in Guatemala through education.

They are a truly amazing non-profit and Beth and I are proud to call them friends. In fact, Chachy and I recently sported my CoEd bowtie in honor of #GivingTuesday. The good folks at Cooperative for Education put together this awesome Guatemala prize pack for our giveaway and we couldn’t be more stoked to give to one of you guys. The prize pack features a bag of Guatemalan coffee, a T-shirt, a bag made in Guatemala and a book about CoEd and Guatemala.

We wanted to make this a fun holiday giveaway, so we made it as simple as possible to enter. Since we asked you guys to share your favorite type of holiday cookies with us, we thought it would only be right if we shared ours too. This is definitely a tough one, but if I had to choose just one, then I’m going to go with the miniature cheese cake cookies my mom makes. Man, I love those things! Beth, on the other hand, has a soft spot for Anise cookies, because they remind of her Nonna who used to cook them every Christmas.

    I think plane old Shortbread would be my favorite, as long as it is baked well and real crunchy.

    Not sure if these are technically a holiday cookie, but I always make 2 kinds of biscotti for X-mas, double-chocolate walnut and cranberry-pistachio. They are wonderful and pretty easy, too!

    Anything gingerbread! The smell is just divine 🙂 Guatemala is high on our travel destination list- we’ve only heard good things from everyone who has been! The CoEd sounds really interesting, and we’ll definitely keep them in mind for when we visit!

    Not really a cookie, but my favorite thing to bake during the holidays is Pecan Tartlets… itsy-bitsy pecan pies made first by my grandmother.

    I’m usually an oatmeal raison kinda gal but during the holiday season it’s got to be a Danish butter cookie! That and the delicious gingerbread men my 3 year old nephew makes with ‘help’ from my 1 year old neice…

    I like the classic decorated sugar cookie. It’s always fun getting out the cookie cutters to make them!

    But in terms of holiday sweets, I love Italian panettone!

    My favorite cookie, special to this time of the year, are candy cane cookies which I’ve only really seen my family make. Which is a shame because they are amazing!

    Of course it would have to be fresh baked gingerbread cookies. The smell of gingerbread always makes me think of Christmas.

    Cookies??? I WILL JUST ABOUT EAT ANY! But Chocolate Chip cookies are the best!

    And yeah… absolutely love what CoEd is doing in Guatemala… would love to connect when the visit is planned!
