Travel Bites: Zucchini Soup Recipe From OverYonderlust!

It’s time for another installation of Travel Bites!

A few months back we featured Erica’s (from OverYonderlust.com) famous drunken beans! The recipe was quite a hit and now we’re back with Erica’s zucchini soup!

She made this for us when we stayed together at this wonderful Florence apartment. So I can attest to the fact that this recipe is not only easy but very, very tasty!

Ingredients:

1 onion chopped
2 cloves of garlic
2 tomatoes
3 small potatoes chopped
3 zucchini chopped
1/2 liter of milk
1 veggie bouillon cube
Salt, pepper (lemon pepper if you have it), hot pepper if you like some spice

First, caramelize the onions until clear. Then add the garlic in the same pan for  about 30 seconds. Then add the zucchini until it is softened. Then add the potatoes until soft (maybe 1-2 mins).

Then add your milk and top off the mix with water (just enough to cover the top of the veggies) and pop in your bouillon cube. Bring the pot to a boil and then simmer for about 25- 30 mins.

Feel free to add grated cheese into the soup (any kind you like) and enjoy!

    Yummy! Zucchini is like my favorite thing ever, so I’ll have to give this a try sometime! I recently learned how to make cucumber soup in Bali, I imagine it’s a bit similar 🙂

    Courgettes, as we call them in he UK, have to be one of my favourite vegetables, I have had them fried, boiled and steamed, but never thought of making a soup with them. That is about to change!!

    Sounds yummy! What happens to the tomatoes, though? Unless I’m not reading it properly (a distinct possibility) I don’t see them mentioned in the directions.
